Super Egg Salad
I recently tried this salad at my friend Tina’s, and I fell in love. It’s the easiest, healthiest thing to make. This week I made a batch for Nick and I to share for lunch for a couple of days. If you’re not usually an egg salad person (like me), go ahead and try this. The avocado gives it yummy flavor and the celery gives crunchiness. Super good!
Ingredients
6 hard boiled eggs, chopped
3-6 organic celery stalks, chopped
1 organic avocado, diced
A handful of organic cherry tomatoes, diced
2 organic green onions, chopped
1 healthy teaspoon Dijon mustard
In a large bowl, combine all of the ingredients and toss. I had mine on toasted Ezekiel bread - Nick liked it with seedy crunchy crackers. Whatever you prefer!
